At Saturday’s cookery lesson for the Geezers I watched John Forster (left) carefully writing down the recipes. He typed then up, so that our readers could try them out for themselves.
Cooking Jerk Chicken
Buy chicken thighs. Sprinkle them with All Purpose Seasoning and rub it in. Add Jamaican Jerk Chicken Seasoning, also rub over all the chicken, then leave to marinate overnight.
Preheat the oven to 180°C, place the chicken on a metal tray, and cook in the oven for at least one hour, turning it over several times.
Peas and Rice
In a pan put ½ tin black-eyed peas, and ½ tin of red kidney beans,
some coconut milk, a sprig of thyme, add water and cook until
beans are soft.
Rinse ½ cup of rice in water, drain then put the rice into a different pan. Add the
beans to the rice plus the liquid from the beans. Add some vegetable oil to the
mix, and return to the a moderate heat until the rice is cooked.
Macaroni Cheese
Ingredients:
1 oz Butter
1 oz Flour
3 oz Macaroni
½ Pt Milk
6 oz of grated cheese – 3oz Cheddar and 3 oz Red Leicester. The Red
Leicester will add colour to the mix).
Put the Macaroni into boiling water and cook. In another saucepan melt the butter until you get a sandy texture then add the milk. Mix well with a whisk until it thickens (top photo), at this stage add ½ of the cheese to the milk and stir in well. Taste the cheese mix, you may need to add a bit more cheese. Once the mix is ready add the cheese sauce to the macaroni and mix well. Then turn the mix into an oven proof dish and sprinkle the remaining cheese on top of the Macaroni. Put some Mozzarella cheese over the top and bake in the oven cook until it melts.

All purpose seasoning:
You can buy it in packets or jars, but you could also make it yourself. Typical ingredients would be: salt, pepper, paprika/chilli, parsley/dried thyme, dried onion, garlic powder.
Jerk chicken seasoning would be hotter: add in chilli flakes along with the paprika, ground cinnamon, ground nutmeg, ground clove, ground cumin and brown sugar
